Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and cook until browned on all sides.
3. Add chopped onion and minced garlic, cook until softened.
4. Stir in ranch dressing mix and beef broth.
5. Add carrots, potatoes, salt, and pepper.
6. Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
7. Serve hot and enjoy!

Feel free to add other vegetables like peas or green beans.
