Instructions:
1. Boil the palm nuts until soft, then pound to extract the juice. Strain and set aside.
2. In a pot, add the chicken pieces, chopped onion, stock cubes, and salt. Cook until the chicken is tender.
3. Add the extracted palm nut juice to the pot and bring to a boil.
4. Stir in the ground crayfish and chopped spinach. Simmer for another 10 minutes.
5. Adjust seasoning if necessary and serve hot with rice or yam.
Notes:
Ofe Akwu is a traditional Nigerian stew that is rich in flavor and nutrients. It's best enjoyed fresh and hot.
