Ingredients:  

Main Ingredients

  • 1 cup Lentils rinsed
  • 4 links Sausage sliced
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Chicken Broth
  • 1 can Diced Tomatoes
  • 1 tsp Thyme dried
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • Heat a large pot over medium heat. Add the sausage and cook until browned.
  • Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • Stir in the lentils, chicken broth, diced tomatoes, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30-35 minutes, until lentils are tender.
  • Adjust seasoning if needed. Serve hot.

Notes:

This stew can be stored in the fridge for up to 3 days.
