Instructions:
Heat a large pot over medium heat. Add the sausage and cook until browned.
Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
Stir in the lentils, chicken broth, diced tomatoes, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30-35 minutes, until lentils are tender.
Adjust seasoning if needed. Serve hot.

This stew can be stored in the fridge for up to 3 days.
