Ingredients:  

Main Ingredients

  • 1 lb White fish fillets cut into chunks
  • 1 cup Diced tomatoes canned
  • 1 cup Fish stock
  • 1 cup Diced potatoes
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 cup Water

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic, sauté until softened.
  • Add diced tomatoes, fish stock, and water. Bring to a simmer.
  • Add diced potatoes, paprika, salt, and black pepper. Cook until potatoes are tender.
  • Add fish chunks and simmer until fish is cooked through.
  • Serve hot with crusty bread.

Notes:

This stew is even better the next day!
