Ingredients:  

Main Ingredients

  • 1 lb Beef Chuck cut into cubes
  • 1 lb Pork Shoulder cut into cubes
  • 2 Carrots sliced
  • 2 Potatoes diced
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 1 cup Red Wine
  • 2 tbsp Tomato Paste
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add beef and pork, cook until browned on all sides.
  • 3. Remove meat from pot and set aside.
  • 4. In the same pot, add onions and garlic, cook until softened.
  • 5. Stir in tomato paste, cook for 2 minutes.
  • 6. Add red wine, beef broth, carrots, potatoes, thyme, rosemary, salt, and pepper.
  • 7. Return meat to the pot, bring to a boil.
  • 8. Reduce heat to low, cover, and simmer for 2 hours.
  • 9. Serve hot.

Notes:

For a thicker stew, mix 2 tbsp of flour with a bit of water and stir into the stew during the last 30 minutes of cooking.
