carrots, diced

diced tomatoes (14.5 oz)

Salt and pepper to taste
Instructions:
Soak the lima beans overnight or use quick-soak method.
In a large pot, sauté the onion and garlic until translucent.
Add the carrots and celery, cook for another 5 minutes.
Add the soaked lima beans, diced tomatoes, vegetable broth, bay leaf, and thyme.
Bring to a boil, then reduce heat and simmer for 45 minutes or until beans are tender.
Season with salt and pepper to taste.
Notes:
For a richer flavor, you can add a splash of olive oil before serving.
