Ingredients:  

Main Ingredients

  • 2 cups dried lima beans
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions: 

  • Soak the lima beans overnight or use quick-soak method.
  • In a large pot, sauté the onion and garlic until translucent.
  • Add the carrots and celery, cook for another 5 minutes.
  • Add the soaked lima beans, diced tomatoes, vegetable broth, bay leaf, and thyme.
  • Bring to a boil, then reduce heat and simmer for 45 minutes or until beans are tender.
  • Season with salt and pepper to taste.

Notes:

For a richer flavor, you can add a splash of olive oil before serving.
