Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the pork chunks and brown on all sides.
3. Add the chopped onion and minced garlic, cook until softened.
4. Stir in the thyme, salt, and black pepper.
5. Add the chicken broth and bring to a boil. Reduce heat and simmer for 45 minutes.
6. Add the sliced apples and cook for another 15 minutes, until the apples are tender.
7. Serve hot and enjoy!
