Ingredients:  

Main Ingredients

  • 1 cup red lentils
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 2 tablespoons vegetable oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 can diced tomatoes 400 grams
  • 4 cups vegetable broth
  • to taste salt
  • to taste black pepper
  • 1 handful fresh cilantro chopped, for garnish

Instructions: 

  • Heat the oil in a large pot over medium heat.
  • Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  • Add the turmeric, cumin, coriander, and garam masala. Cook for another minute.
  • Add the diced tomatoes and cook for 5 minutes.
  • Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes or until lentils are tender.
  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro before serving.

Notes:

For a thicker stew, you can blend a portion of it and mix it back in.
