Instructions:
1. Heat olive oil in a Dutch oven over medium-high heat.
2. Add the London Broil cubes and brown on all sides. Remove and set aside.
3. In the same pot, add the onions and garlic, and sauté until softened.
4. Sprinkle flour over the onions and garlic, stirring constantly for about 2 minutes.
5. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
6. Add the beef broth, carrots, potatoes, thyme, rosemary, salt, and pepper.
7. Return the browned London Broil to the pot. Bring to a boil, then reduce heat to low.
8. Cover and simmer for about 2 hours, or until the meat is tender.
9. Serve hot and enjoy!
Notes:
For a thicker stew, mash some of the potatoes before serving.
