Ingredients:  

Main Ingredients

  • 2 lbs Beef Brisket cut into chunks
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 2 tbsp Tomato Paste
  • 2 tbsp Olive Oil
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste
  • 2 tsp Thyme dried
  • 2 tsp Rosemary dried

Instructions: 

  • 1. Heat olive oil in a Dutch oven over medium-high heat.
  • 2. Add brisket chunks and brown on all sides. Remove and set aside.
  • 3. In the same pot, add onions and garlic. Sauté until softened.
  • 4. Stir in tomato paste, cooking for another minute.
  • 5. Return brisket to the pot. Add beef broth, carrots, potatoes, thyme, and rosemary.
  • 6. Bring to a boil, then reduce heat to low. Cover and simmer for 3 hours.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

For a richer flavor, let the stew sit overnight in the fridge and reheat before serving.
