Mashed Potatoes Ingredients

potatoes, peeled and cubed

Instructions:
1. In a large pot, brown the beef cubes over medium heat.
2. Add the chopped onion and minced garlic, cook until softened.
3. Stir in the tomato paste, beef broth, carrots, potatoes, thyme, salt, and pepper.
4. Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
5. For the mashed potatoes, boil the peeled and cubed potatoes until tender.
6. Drain the potatoes and mash with milk, butter, salt, and pepper until smooth.
7. Serve the beef stew hot with a side of mashed potatoes.
Notes:
Feel free to add more vegetables like peas or green beans to the stew.
