Ingredients:  

Beef Stew Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, cubed
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Mashed Potatoes Ingredients

  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • 1. In a large pot, brown the beef cubes over medium heat.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Stir in the tomato paste, beef broth, carrots, potatoes, thyme, salt, and pepper.
  • 4. Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
  • 5. For the mashed potatoes, boil the peeled and cubed potatoes until tender.
  • 6. Drain the potatoes and mash with milk, butter, salt, and pepper until smooth.
  • 7. Serve the beef stew hot with a side of mashed potatoes.

Notes:

Feel free to add more vegetables like peas or green beans to the stew.
