Instructions:
1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
2. Add chopped onions and minced garlic to the pot. Cook until onions are translucent.
3. Stir in tomato paste, beef broth, and water. Bring to a boil.
4. Add lentils, carrots, and celery. Reduce heat and simmer for about 1 hour, or until lentils and beef are tender.
5. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store in the fridge and reheat gently.
