Ingredients:  

Main Ingredients

  • 2 lbs beef chuck cut into 2-inch cubes
  • 1 bottle red wine preferably Côtes du Rhône
  • 2 cups beef broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 1 orange zested
  • 1 tsp thyme dried
  • 1 tsp rosemary dried
  • 2 tbsp olive oil
  • to taste salt and pepper

Instructions: 

  • 1. Preheat your oven to 300°F (150°C).
  • 2. Heat olive oil in a Dutch oven over medium heat. Brown the beef cubes on all sides. Remove and set aside.
  • 3. In the same pot, add the chopped onion and minced garlic. Cook until softened.
  • 4. Return the beef to the pot. Add the red wine, beef broth, carrots, orange zest, thyme, and rosemary. Season with salt and pepper.
  • 5. Bring to a simmer, cover, and transfer to the preheated oven. Cook for about 3 hours, or until the beef is tender.
  • 6. Serve hot, garnished with fresh herbs if desired.

Notes:

This stew is even better the next day. Serve with crusty bread or over mashed potatoes.
