Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and minced garlic, sauté until translucent.
3. Add liver pieces and cook until browned.
4. Pour in beef broth and bring to a boil.
5. Add diced potatoes and sliced carrots, reduce heat and simmer for 30 minutes.
6. Season with salt and black pepper to taste. Serve hot.
Notes:
This liver stew is best served with crusty bread.
