Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef stew meat and cook until browned on all sides.
3. Add the chopped onions, carrots, celery, and garlic. Cook until vegetables are tender.
4. Pour in the beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 1.5 hours.
5. Add the gnocchi and cook for another 10 minutes, until gnocchi is tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is perfect for a cozy dinner. Feel free to add more vegetables if you like.
