Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 can Diced Tomatoes (14.5 oz)
  • 1 lb Gnocchi
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef stew meat and cook until browned on all sides.
  • 3. Add the chopped onions, carrots, celery, and garlic. Cook until vegetables are tender.
  • 4. Pour in the beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  • 5. Add the gnocchi and cook for another 10 minutes, until gnocchi is tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Feel free to add more vegetables if you like.
