Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Melt butter in a large pot over medium heat.
Add leeks, carrots, and celery. Cook until softened.
Stir in flour and cook for 2 minutes.
Gradually add fish stock, stirring constantly.
Add potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender.
Add mixed seafood and cook until done.
Stir in heavy cream and season with salt and pepper.
Garnish with fresh parsley before serving.
