Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 zucchini, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 cup kale, chopped
  • to taste salt and pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • Add the sliced carrots and chopped zucchini, and cook for about 5 minutes.
  • Stir in the diced tomatoes, vegetable broth, dried basil, and dried oregano. Bring to a boil.
  • Reduce the heat and let it simmer for about 20 minutes, or until the vegetables are tender.
  • Add the chopped kale and cook for another 5 minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes:

This stew is great with a slice of crusty bread.
