Ingredients:  

Main Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 1 cup Onion chopped
  • 1 cup Bell Pepper chopped
  • 1 cup Celery chopped
  • 3 cloves Garlic minced
  • 2 cups Chicken Broth
  • 1 can Diced Tomatoes 14.5 oz
  • 1 tsp Thyme dried
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Cayenne Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chicken thighs and cook until browned on all sides. Remove and set aside.
  • 3. In the same pot, add onion, bell pepper, and celery. Cook until softened.
  • 4. Add garlic and cook for another minute.
  • 5. Pour in chicken broth and diced tomatoes. Stir in thyme, paprika, salt, black pepper, and cayenne pepper.
  • 6. Return chicken to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 7. Serve hot and enjoy!

Notes:

This Creole stew is even better the next day!
