Olive Oil
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chicken thighs and cook until browned on all sides. Remove and set aside.
3. In the same pot, add onion, bell pepper, and celery. Cook until softened.
4. Add garlic and cook for another minute.
5. Pour in chicken broth and diced tomatoes. Stir in thyme, paprika, salt, black pepper, and cayenne pepper.
6. Return chicken to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
7. Serve hot and enjoy!
