Ingredients:  

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Onion, chopped
  • 1 cup Bell Pepper, chopped
  • 1 cup Celery, chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 can Diced tomatoes 14.5 oz
  • 2 cups Chicken broth
  • 2 tbsp Olive oil
  • to taste Salt and pepper
  • 2 cups Cooked rice for serving

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  • Add garlic and cook for another minute.
  • Stir in Cajun seasoning and cook for 1 minute.
  • Add diced tomatoes and chicken broth. Bring to a simmer.
  • Add shrimp and cook until pink and cooked through, about 5 minutes.
  • Season with salt and pepper to taste.
  • Serve hot over cooked rice.

Notes:

This stew is perfect for a cozy dinner. Adjust the Cajun seasoning to your taste.
