Instructions:
Heat the oil in a large pot over medium heat.
Add the beef and cook until browned on all sides.
Add the chopped onion and minced garlic, cook until softened.
Stir in the tomato paste and cook for a few minutes.
Pour in the beef broth, add the carrots, potatoes, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for about an hour, or until the meat and vegetables are tender.
Notes:
Serve hot with rice or bread.
