Ingredients:

  • 2 cups Diced Potatoes
  • 1 cup Diced Carrots
  • 1 cup Diced Onions
  • 4 cups Vegetable Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the diced onions and cook until translucent, about 5 minutes.
  • 3. Add the diced carrots and potatoes, and cook for another 5 minutes.
  • 4. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 30 minutes.
  • 5. Season with salt and black pepper to taste. Serve hot.
