Instructions:
1. Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast for 30 minutes.
2. Transfer the roasted bones to a large pot. Add the chopped onion, carrots, celery, and garlic.
3. Pour in the water and add the salt, black pepper, apple cider vinegar, thyme, and bay leaves.
4. Bring to a boil, then reduce the heat to low and let it simmer for at least 4 hours. Skim off any foam that forms on the surface.
5. Remove the bones and bay leaves. Adjust seasoning if needed. Serve hot.
Notes:
This stew is great for meal prep and can be stored in the fridge for up to 5 days.
