Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic, cumin, coriander, turmeric, and paprika. Cook for another 2 minutes.
Add the diced tomatoes, chickpeas, vegetable broth, salt, and pepper. Bring to a boil.
Reduce heat and let simmer for 20 minutes.
Stir in the chopped cilantro just before serving.
Notes:
This stew pairs well with rice or flatbread.
