Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1 can diced tomatoes
  • 2 cans chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Stir in the minced garlic, cumin, coriander, turmeric, and paprika. Cook for another 2 minutes.
  • Add the diced tomatoes, chickpeas, vegetable broth, salt, and pepper. Bring to a boil.
  • Reduce heat and let simmer for 20 minutes.
  • Stir in the chopped cilantro just before serving.

Notes:

This stew pairs well with rice or flatbread.
