Ingredients:  

Beef Stew

  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Biscuits

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup milk

Instructions: 

  • 1. Heat olive oil in a Dutch oven over medium heat. Brown the beef cubes on all sides.
  • 2. Add chopped onion and minced garlic, cook until softened.
  • 3. Stir in beef broth, carrots, potatoes, tomato paste, thyme, and rosemary. Bring to a boil.
  • 4. Reduce heat, cover, and simmer for 2 hours or until beef is tender. Season with salt and pepper.
  • 5. Preheat oven to 425°F (220°C).
  • 6. In a mixing bowl, combine flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  • 7. Stir in milk just until dough comes together. Drop by spoonfuls onto a baking sheet.
  • 8. Bake for 12-15 minutes or until golden brown.

Notes:

Serve the beef stew hot with freshly baked biscuits.
