Brown sugar
Instructions:
1. Heat a large pot over medium heat. Add a bit of oil and brown the beef chunks.
2. Add the garlic, ginger, and onion. Cook until fragrant.
3. Stir in the red curry paste, fish sauce, soy sauce, and brown sugar.
4. Pour in the coconut milk and beef broth. Bring to a boil.
5. Add the carrots and potatoes. Reduce heat and simmer for about 2 hours, or until the beef is tender.
6. Serve hot with rice or bread.
Notes:
Adjust the level of curry paste to your taste.
