Ingredients:  

Main Ingredients

  • 1 lb Beef stew meat cut into chunks
  • 1 can Coconut milk
  • 2 cups Beef broth
  • 1 tbsp Red curry paste
  • 1 tbsp Fish sauce
  • 1 tbsp Soy sauce
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Onion chopped
  • 1 tbsp Brown sugar

Instructions: 

  • 1. Heat a large pot over medium heat. Add a bit of oil and brown the beef chunks.
  • 2. Add the garlic, ginger, and onion. Cook until fragrant.
  • 3. Stir in the red curry paste, fish sauce, soy sauce, and brown sugar.
  • 4. Pour in the coconut milk and beef broth. Bring to a boil.
  • 5. Add the carrots and potatoes. Reduce heat and simmer for about 2 hours, or until the beef is tender.
  • 6. Serve hot with rice or bread.

Notes:

Adjust the level of curry paste to your taste.
