Ingredients:  

Main Ingredients

  • 500 g Chicken cut into pieces
  • 1 cup Coconut Milk
  • 2 Potatoes peeled and cubed
  • 1 Carrot sliced
  • 1 Onion sliced
  • 2 cloves Garlic minced
  • 1 inch Ginger minced
  • 2 Green Chilies slit
  • 1 tsp Black Pepper crushed
  • 1 tsp Turmeric Powder
  • 1 tsp Garam Masala
  • 2 tbsp Coconut Oil
  • to taste Salt
  • 1 cup Water

For Garnish

  • 1 sprig Curry Leaves

Instructions: 

  • Heat coconut oil in a large pot over medium heat.
  • Add sliced onions, minced garlic, and ginger. Sauté until onions turn translucent.
  • Add green chilies, crushed black pepper, turmeric powder, and garam masala. Sauté for a minute.
  • Add chicken pieces and cook until they turn white.
  • Add potatoes, carrots, salt, and water. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  • Pour in coconut milk and simmer for another 5-10 minutes.
  • Garnish with curry leaves and serve hot.

Notes:

This stew pairs well with appam or rice.
