Instructions:
Heat coconut oil in a large pot over medium heat.
Add sliced onions, minced garlic, and ginger. Sauté until onions turn translucent.
Add green chilies, crushed black pepper, turmeric powder, and garam masala. Sauté for a minute.
Add chicken pieces and cook until they turn white.
Add potatoes, carrots, salt, and water. Bring to a boil, then reduce heat and simmer until vegetables are tender.
Pour in coconut milk and simmer for another 5-10 minutes.
Garnish with curry leaves and serve hot.
Notes:
This stew pairs well with appam or rice.
