Ingredients:  

Main Ingredients

  • 1 head Cauliflower chopped into florets
  • 1 large Onion diced
  • 2 cloves Garlic minced
  • 2 cups Vegetable broth
  • 1 can Diced tomatoes 14.5 oz can
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt or to taste
  • 0.5 tsp Black pepper or to taste

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the diced onion and cook until translucent, about 5 minutes.
  • 3. Stir in the minced garlic and cook for another minute.
  • 4. Add the chopped cauliflower florets, vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper.
  • 5. Bring to a boil, then reduce heat and let it simmer for about 20-25 minutes, or until the cauliflower is tender.
  • 6. Adjust seasoning if needed and serve hot.

Notes:

This stew is great on its own or served with a side of crusty bread.
