Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the diced onion and cook until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the chopped cauliflower florets, vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper.
5. Bring to a boil, then reduce heat and let it simmer for about 20-25 minutes, or until the cauliflower is tender.
6. Adjust seasoning if needed and serve hot.
Notes:
This stew is great on its own or served with a side of crusty bread.
