Ingredients:  

Main Ingredients

  • 2 lbs Tri Tip Beef cut into cubes
  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tbsp Tomato Paste

Instructions: 

  • Heat olive oil in a Dutch oven over medium-high heat.
  • Add tri-tip beef cubes and brown on all sides. Remove and set aside.
  • In the same pot, add onions and garlic. Sauté until softened.
  • Stir in tomato paste and cook for another minute.
  • Return beef to the pot. Add beef broth, carrots, and potatoes.
  • Season with salt and black pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.
  • Serve hot and enjoy!

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat gently.
