Tri Tip Beef
cut into cubes

Olive Oil

Onion

Garlic

Beef Broth

Carrots
sliced

Potatoes
diced

Black Pepper
to taste

Tomato Paste
Instructions:
Heat olive oil in a Dutch oven over medium-high heat.
Add tri-tip beef cubes and brown on all sides. Remove and set aside.
In the same pot, add onions and garlic. Sauté until softened.
Stir in tomato paste and cook for another minute.
Return beef to the pot. Add beef broth, carrots, and potatoes.
Season with salt and black pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.
Serve hot and enjoy!
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat gently.
