beef broth

red wine

tomato paste

thyme

carrots

Instructions:
1. Preheat your smoker to 225°F (107°C).
2. Season the stew meat with salt and pepper.
3. Place the meat in the smoker and smoke for 1 hour.
4. In a Dutch oven, heat some oil over medium heat. Add the onion and garlic, and cook until softened.
5. Add the smoked meat to the Dutch oven. Stir in the beef broth, red wine, tomato paste, and thyme.
6. Bring to a simmer, then cover and cook on low for 1 hour.
7. Add the carrots and potatoes. Cook for another 30 minutes, or until vegetables are tender.
8. Adjust seasoning with salt and pepper to taste. Serve hot.
Notes:
For extra flavor, you can add a bay leaf or two while simmering.
