Ingredients:  

Main Ingredients

  • 2 lbs stew meat cut into chunks
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp thyme dried
  • 2 cups carrots sliced
  • 2 cups potatoes cubed
  • to taste salt and pepper

Instructions: 

  • 1. Preheat your smoker to 225°F (107°C).
  • 2. Season the stew meat with salt and pepper.
  • 3. Place the meat in the smoker and smoke for 1 hour.
  • 4. In a Dutch oven, heat some oil over medium heat. Add the onion and garlic, and cook until softened.
  • 5. Add the smoked meat to the Dutch oven. Stir in the beef broth, red wine, tomato paste, and thyme.
  • 6. Bring to a simmer, then cover and cook on low for 1 hour.
  • 7. Add the carrots and potatoes. Cook for another 30 minutes, or until vegetables are tender.
  • 8. Adjust seasoning with salt and pepper to taste. Serve hot.

Notes:

For extra flavor, you can add a bay leaf or two while simmering.
