Ingredients:  

Main Ingredients

  • 2 lbs Beef Chuck cut into cubes
  • 2 tbsp Olive Oil
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 cups Diced Tomatoes canned
  • 3 large Carrots sliced
  • 4 large Potatoes diced
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tsp Paprika
  • 1 tsp Dried Thyme

Instructions: 

  • Heat olive oil in a large pot over medium-high heat. Add beef and cook until browned on all sides. Remove beef and set aside.
  • In the same pot, add diced onion and cook until translucent. Add minced garlic and cook for another minute.
  • Return beef to the pot. Add beef broth, diced tomatoes, sliced carrots, and diced potatoes. Stir to combine.
  • Season with salt, black pepper, paprika, and dried thyme. Bring to a boil, then reduce heat to low and simmer for 2 hours, or until beef is tender.
  • Serve hot and enjoy!

Notes:

Feel free to add other vegetables like peas or corn for extra flavor.
