Instructions:
Heat olive oil in a large pot over medium-high heat. Add beef and cook until browned on all sides. Remove beef and set aside.
In the same pot, add diced onion and cook until translucent. Add minced garlic and cook for another minute.
Return beef to the pot. Add beef broth, diced tomatoes, sliced carrots, and diced potatoes. Stir to combine.
Season with salt, black pepper, paprika, and dried thyme. Bring to a boil, then reduce heat to low and simmer for 2 hours, or until beef is tender.
Serve hot and enjoy!
Notes:
Feel free to add other vegetables like peas or corn for extra flavor.
