Instructions:
1. In a Dutch oven, melt the butter over medium heat. Add the onions and cook until caramelized, about 20 minutes.
2. Add the garlic and cook for another minute.
3. Sprinkle the flour over the onions and garlic, stirring constantly for 2 minutes.
4. Pour in the beef broth and red wine, if using. Stir well to combine.
5. Add the beef, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 2 hours, or until the beef is tender.
6. Serve hot, garnished with fresh thyme if desired.
Notes:
This stew pairs well with crusty bread or mashed potatoes.
