Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onions and cook until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the jackfruit, diced tomatoes, vegetable broth, cumin, paprika, salt, and black pepper. Stir well.
5. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
6. Adjust seasoning to taste and serve hot.
Notes:
For a spicier stew, add a pinch of red pepper flakes.
