Ingredients:  

Main Ingredients

  • 2 cups Jackfruit (canned, drained)
  • 1 cup Diced Tomatoes
  • 1 cup Chopped Onions
  • 2 cloves Garlic (minced)
  • 1 cup Vegetable Broth
  • 1 tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onions and cook until translucent, about 5 minutes.
  • 3. Stir in the minced garlic and cook for another minute.
  • 4. Add the jackfruit, diced tomatoes, vegetable broth, cumin, paprika, salt, and black pepper. Stir well.
  • 5. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
  • 6. Adjust seasoning to taste and serve hot.

Notes:

For a spicier stew, add a pinch of red pepper flakes.
