Instructions:
1. In a large pot, cook the sliced smoked sausage over medium heat until browned.
2. Add the chopped onion, minced garlic, and sliced celery to the pot. Cook until the vegetables are softened.
3. Stir in the diced potatoes and sliced carrots. Cook for a few minutes.
4. Pour in the chicken broth and add the dried thyme, salt, and black pepper. Bring to a boil.
5. Reduce the heat and let the stew simmer for about 30 minutes, or until the vegetables are tender.
6. Serve hot and enjoy!
