Ingredients:  

Main Ingredients

  • 2 lbs Beef Chuck cut into chunks
  • 4 Carrots peeled and chopped
  • 4 Potatoes peeled and chopped
  • 1 Onion chopped
  • 3 cups Beef Broth
  • 1 cup Guinness Beer
  • 2 tbsp Tomato Paste
  • 2 tsp Thyme dried
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef chunks and brown them on all sides. Remove and set aside.
  • 3. In the same pot, add the onions and cook until softened.
  • 4. Stir in the tomato paste and cook for another minute.
  • 5. Return the beef to the pot and add the carrots, potatoes, beef broth, Guinness beer, thyme, salt, and pepper.
  • 6. Bring to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beef is tender.
  • 7. Serve hot and enjoy!

Notes:

This stew tastes even better the next day!
