Ingredients:  

Main Ingredients

  • 2 lbs goat meat, cut into chunks
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 tbsp tomato paste
  • 2 cups beef broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 cup peas

Instructions: 

  • 1. Heat the oil in a large pot over medium heat. Add the goat meat and brown on all sides.
  • 2. Add the chopped onion and garlic to the pot and cook until the onion is translucent.
  • 3. Stir in the chopped tomatoes and tomato paste. Cook for a few minutes until the tomatoes soften.
  • 4. Pour in the beef broth and add the cumin, coriander, paprika, salt, and pepper. Bring to a boil.
  • 5. Reduce the heat to low, cover, and simmer for 1.5 hours or until the meat is tender.
  • 6. Add the carrots and potatoes to the pot. Cook for another 30 minutes or until the vegetables are tender.
  • 7. Stir in the peas and cook for an additional 5 minutes. Adjust seasoning if needed.
  • 8. Serve hot and enjoy!

Notes:

This stew is even better the next day as the flavors meld together.
