beef chuck, cut into 1-inch cubes

olive oil

onion, chopped

garlic, minced

carrots, sliced

potatoes, diced

beef broth

cup
red wine

tomato paste

tsp
thyme
1
tsp
rosemary
Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat. Brown the beef cubes on all sides. Remove and set aside.
In the same pot, add the onion and garlic. Cook until softened.
Add the carrots and potatoes. Cook for a few minutes.
Stir in the tomato paste, thyme, and rosemary.
Return the beef to the pot. Pour in the beef broth and red wine.
Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the beef is tender.
Season with salt and pepper to taste.
