Ingredients:  

Main Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat. Brown the beef cubes on all sides. Remove and set aside.
  • In the same pot, add the onion and garlic. Cook until softened.
  • Add the carrots and potatoes. Cook for a few minutes.
  • Stir in the tomato paste, thyme, and rosemary.
  • Return the beef to the pot. Pour in the beef broth and red wine.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the beef is tender.
  • Season with salt and pepper to taste.
