Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the sliced onions and cook until they are soft and golden, about 10 minutes.
3. Add the minced garlic and cook for another 2 minutes.
4. Pour in the vegetable broth, add the thyme, salt, and pepper. Stir well.
5. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
6. Serve hot and enjoy!

Feel free to add other vegetables or proteins to make it more hearty.
