Ingredients:  

Main Ingredients

  • 4 large onions sliced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 2 cloves garlic minced
  • 1 tsp thyme dried
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the sliced onions and cook until they are soft and golden, about 10 minutes.
  • 3. Add the minced garlic and cook for another 2 minutes.
  • 4. Pour in the vegetable broth, add the thyme, salt, and pepper. Stir well.
  • 5. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add other vegetables or proteins to make it more hearty.
