Ingredients:  

Main Ingredients

  • 4 fillets Tilapia fresh or thawed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced Tomatoes 14.5 oz
  • 2 cups Chicken Broth
  • 1 tsp Paprika
  • 1 tsp Salt or to taste
  • 1/2 tsp Black Pepper or to taste
  • 2 tbsp Olive Oil
  • 1 cup Bell Pepper chopped
  • 1 cup Carrots sliced
  • 1 cup Potatoes diced

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • Add the bell pepper, carrots, and potatoes. Cook for about 5 minutes, stirring occasionally.
  • Pour in the chicken broth and diced tomatoes. Bring to a simmer.
  • Add the paprika, salt, and black pepper. Stir well.
  • Place the tilapia fillets into the pot. Cover and cook for about 15 minutes, or until the fish is cooked through and the vegetables are tender.
  • Serve hot and enjoy!

Notes:

You can adjust the seasoning to your taste. Serve with crusty bread for a complete meal.
