Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic. Sauté until the onion is translucent.
Add the bell pepper, carrots, and potatoes. Cook for about 5 minutes, stirring occasionally.
Pour in the chicken broth and diced tomatoes. Bring to a simmer.
Add the paprika, salt, and black pepper. Stir well.
Place the tilapia fillets into the pot. Cover and cook for about 15 minutes, or until the fish is cooked through and the vegetables are tender.
Serve hot and enjoy!
Notes:
You can adjust the seasoning to your taste. Serve with crusty bread for a complete meal.
