Ingredients:  

Main Ingredients

  • 4 turnips peeled and diced
  • 2 carrots sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste
  • 1 tsp thyme dried

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • Add the diced turnips and sliced carrots. Cook for about 5 minutes, stirring occasionally.
  • Pour in the vegetable broth and add the thyme, salt, and black pepper. Bring to a boil.
  • Reduce the heat to low and let it simmer for about 30-35 minutes, or until the vegetables are tender.
  • Adjust seasoning if necessary. Serve hot.

Notes:

Feel free to add other root vegetables like potatoes or parsnips for variety.
