Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic. Sauté until the onion is translucent.
Add the diced turnips and sliced carrots. Cook for about 5 minutes, stirring occasionally.
Pour in the vegetable broth and add the thyme, salt, and black pepper. Bring to a boil.
Reduce the heat to low and let it simmer for about 30-35 minutes, or until the vegetables are tender.
Adjust seasoning if necessary. Serve hot.
Notes:
Feel free to add other root vegetables like potatoes or parsnips for variety.
