Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder, cubed
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 2 cups Roasted green chilies, chopped
  • 4 cups Chicken broth
  • 2 tsp Ground cumin
  • 1 tsp Dried oregano
  • to taste Salt and pepper

Instructions: 

  • 1. Heat a large pot over medium-high heat. Add the cubed pork shoulder and cook until browned on all sides.
  • 2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the roasted green chilies, chicken broth, ground cumin, and dried oregano. Bring to a boil.
  • 4. Reduce the heat to low and let the stew simmer for about 45 minutes, or until the pork is tender.
  • 5. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the refrigerator and reheat before serving.
