Ingredients:  

Main Ingredients

  • 1 lb Chicken cut into pieces
  • 1 lb Pork cut into pieces
  • 2 cups Corn fresh or frozen
  • 2 cups Lima Beans fresh or frozen
  • 1 cup Tomatoes diced
  • 1 cup Onion chopped
  • 4 cups Chicken Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • 1. In a large pot, cook the chicken and pork over medium heat until browned.
  • 2. Add the onion and cook until softened.
  • 3. Stir in the tomatoes, corn, lima beans, and chicken broth.
  • 4. Season with salt and black pepper.
  • 5. Bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.
  • 6. Serve hot and enjoy!

Notes:

This stew is even better the next day. Store leftovers in the fridge.
