Instructions:
1. Heat a large pot over medium heat. Add the beef stew meat and cook until browned on all sides.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Pour in the beef broth and add the sliced carrots and diced potatoes. Stir to combine.
4. Add the dried thyme, salt, and black pepper. Bring the mixture to a boil.
5. Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the vegetables are tender and the meat is cooked through.
6. Taste and adjust seasoning if needed. Serve hot.
Notes:
Feel free to add other vegetables like peas or corn for extra flavor.
