Ingredients:  

Main Ingredients

  • 2 cups Corn kernels fresh or frozen
  • 1 cup Diced potatoes
  • 1 cup Diced carrots
  • 1 cup Diced celery
  • 1 cup Chopped onions
  • 4 cups Vegetable broth
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste
  • 1 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onions and cook until translucent.
  • 3. Add the diced potatoes, carrots, and celery. Cook for about 5 minutes.
  • 4. Pour in the vegetable broth and bring to a boil.
  • 5. Add the corn kernels, salt, and black pepper. Reduce heat and simmer for 20 minutes.
  • 6. Serve hot and enjoy!

Notes:

This stew is perfect for a cozy night in. Feel free to add more vegetables or spices to suit your taste.
