Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat cut into cubes
  • 4 cups Beef Broth
  • 2 cups Red Wine
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 large Carrots sliced
  • 4 large Potatoes cubed
  • 2 tbsp Tomato Paste
  • 2 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tsp Dried Thyme
  • 2 tsp Dried Rosemary
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add beef stew meat and cook until browned on all sides.
  • 3. Add chopped onion and minced garlic, cook until softened.
  • 4. Stir in tomato paste, salt, pepper, thyme, and rosemary.
  • 5. Pour in red wine and beef broth, bring to a boil.
  • 6. Reduce heat, cover, and simmer for 1 hour.
  • 7. Add carrots and potatoes, simmer for another hour or until vegetables are tender.
  • 8. Adjust seasoning if needed and serve hot.

Notes:

This stew is even better the next day, so feel free to make it ahead of time.
