Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and cook until browned on all sides.
3. Add chopped onion and minced garlic, cook until softened.
4. Stir in tomato paste, salt, pepper, thyme, and rosemary.
5. Pour in red wine and beef broth, bring to a boil.
6. Reduce heat, cover, and simmer for 1 hour.
7. Add carrots and potatoes, simmer for another hour or until vegetables are tender.
8. Adjust seasoning if needed and serve hot.
Notes:
This stew is even better the next day, so feel free to make it ahead of time.
