Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans butter beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp paprika
  • 1 tsp dried oregano
  • to taste salt and pepper
  • 1 handful fresh parsley, chopped for garnish

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Add the butter beans, diced tomatoes, vegetable broth, paprika, and dried oregano. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.

Notes:

Feel free to add other vegetables like carrots or celery for extra flavor.
