Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and cook until browned on all sides.
3. Remove beef from pot and set aside.
4. In the same pot, add onions and garlic. Cook until softened.
5. Stir in flour and cook for 1 minute.
6. Gradually add beef broth and apple cider, stirring constantly.
7. Return beef to the pot. Add carrots, potatoes, salt, and pepper.
8. Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
Notes:
For a thicker stew, mix 1 tbsp of cornstarch with 2 tbsp of water and stir into the stew during the last 10 minutes of cooking.
