Ingredients:  

Main Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 can Diced Tomatoes 14.5 oz can
  • 4 cups Chicken Broth
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic, cook until softened.
  • Add chicken thighs, cook until browned on all sides.
  • Add carrots and celery, cook for another 5 minutes.
  • Pour in diced tomatoes and chicken broth.
  • Stir in dried oregano and basil. Season with salt and black pepper to taste.
  • Bring to a boil, then reduce heat and let simmer for 30 minutes.
  • Serve hot and enjoy!

Notes:

This stew pairs well with crusty bread or a side salad.
