Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic, cook until softened.
Add chicken thighs, cook until browned on all sides.
Add carrots and celery, cook for another 5 minutes.
Pour in diced tomatoes and chicken broth.
Stir in dried oregano and basil. Season with salt and black pepper to taste.
Bring to a boil, then reduce heat and let simmer for 30 minutes.
Serve hot and enjoy!
