Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into cubes
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 can Kidney Beans 15 oz can, drained and rinsed
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Paprika
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced

Instructions: 

  • 1. Heat a large pot over medium heat. Add the beef stew meat and cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Pour in the beef broth and diced tomatoes. Stir to combine.
  • 4. Add the kidney beans, salt, black pepper, and paprika. Stir well.
  • 5. Add the sliced carrots and diced potatoes. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the beef is tender and the vegetables are cooked through.
  • 6. Taste and adjust seasoning if needed. Serve hot.

Notes:

Feel free to add other vegetables like peas or corn for extra flavor and texture.
