Ingredients:  

Main Ingredients

  • 1 cup lentils rinsed
  • 2 medium potatoes diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste salt
  • to taste black pepper

Instructions: 

  • 1. In a large pot, heat some oil over medium heat.
  • 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • 3. Add the diced potatoes, rinsed lentils, and vegetable broth. Bring to a boil.
  • 4. Reduce the heat and let it simmer for about 30-35 minutes, or until the lentils and potatoes are tender.
  • 5. Stir in the cumin, paprika, salt, and black pepper. Adjust seasoning to taste.
  • 6. Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. You can add other vegetables like carrots or celery for extra flavor.
