Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and sauté until translucent, about 5 minutes.
3. Add minced garlic, chopped carrots, and celery. Cook for another 5 minutes.
4. Stir in the soaked black-eyed peas, vegetable broth, diced tomatoes, thyme, paprika, salt, and black pepper.
5. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the peas are tender.
6. Adjust seasoning to taste and serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
