Ingredients:  

Main Ingredients

  • 2 cups Black-eyed peas soaked overnight
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 4 cups Vegetable broth
  • 1 can Diced tomatoes 14.5 oz can
  • 1 tsp Thyme dried
  • 1 tsp Paprika
  • 1 tsp Salt or to taste
  • 1/2 tsp Black pepper freshly ground
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onions and sauté until translucent, about 5 minutes.
  • 3. Add minced garlic, chopped carrots, and celery. Cook for another 5 minutes.
  • 4. Stir in the soaked black-eyed peas, vegetable broth, diced tomatoes, thyme, paprika, salt, and black pepper.
  • 5. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the peas are tender.
  • 6. Adjust seasoning to taste and serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
